My grandma has quite the sweet tooth. Every time I visit her in Illinois she either has ice cream, cookies, or pie to share. Now, I’m not complaining, don’t get me wrong! I, too, have a sweet tooth! One of my favorites is a strawberry cream pie that she makes for special occasions. It has become my go-to dessert for family gatherings in Utah. It is a perfect pie for this warmer weather we have been having.
I’m here visiting Illinois this week so I thought it would be great to make the pie for grandma. I’d be lying if I said I haven’t been craving it!
Ingredients: 4 oz softened cream cheese, 1/2 c whipped cream, 1/2 c powdered sugar, graham cracker crust, 3 oz (4 serving) strawberry gelatin, 3.4 oz (4 serving) vanilla pudding (instant or cook and serve is fine), 1 1/4 c water, 2 c diced strawberries. I have used both name brand and store brand ingredients… either way the pie tastes great!
Mix the cream cheese and powdered sugar with a rubber spatula in a medium bowl until well blended. Stir in the whipped cream. Spread the mixture evenly into the pie crust and refrigerate.
Place the gelatin, pudding, and water in a medium saucepan and wisk together until smooth. Cook over medium heat. Stir the mixture constantly until it comes to a boil. Remove it from heat and cool for 5 minutes. Stir in the strawberries.
Pour or spoon the mixture over the creamy pie filling.
You will have a little extra gelatin mixture leftover. You can save that in the fridge for ice cream topping later or to eat right out of the bowl. Refrigerate the pie for at least 4 hours before serving.
Top a slice with a heaping pile of whipped cream and enjoy with some of your favorite people. 🙂 Here’s to you, Grandma!

- Refrigerate the pie for at least 4 hours before serving.
