Summer is quickly approaching which means the farmer’s markets are opening and delicious fruit is hitting the local markets for a much more reasonable price. This fruit salad is to die for!!! It is simple to put together and is sure to please EVERYONE, even the pickiest toddlers.
You will need: fruit, limes or lemons, honey (agave or sugar can also substitute) and the secret ingredient……fresh mint. Oh, the glorious freshness it adds to this beautiful fruit.
I like to gather fruit that offers a rainbow of colors. Purple grapes, peach peaches, green kiwi, red strawberries, blue blueberries… you get the picture. It makes for a more beautiful finished salad.
Chop up the fruit and mint and toss together in a large mixing bowl. Squeeze 1 fresh lime or lemon for every 4 cups of fruit and add 2 T of honey for every 4 cups of fruit. The lime/lemon will prevent the fruit from browning.
Once you’ve given it a quick stir, let it sit in the fridge for 15 minutes then serve. When covered, the salad will keep for one day in the fridge.
You can also pour this fruit salad over a bed of spinach and arugula, and add a little feta, blue cheese, or goat cheese and you have a gorgeous, scrumptious green salad without needing a drop of salad dressing!
You can make an extra large batch and toss some into a Ziploc bag and freeze for smoothies! Just add ice, almond milk, and some plain yogurt. You will not be disappointed!
If by some big fat chance you have any leftover, put it into a container with some wine and a little more sugar and let it sit overnight in the fridge and voila… you have SANGRIA!

Fruit Salad with a Twist!
Ingredients
- 4 cups fruit I use kiwi, strawberries, red grapes, peaches, and blueberries for a variety of color
- 2 T honey can also use sugar, spenda, agave
- 1 fresh lime or lemon
- 1 handful of mint leaves
Instructions
- chop fruit to desired size
- chop mint leaves
- stir 2 T honey for every 4 cups of fruit
- squeeze juice from 1 lime or lemon and pour over top
- stir briefly ensuring not to smash fruit
- cover and refrigerate for 15 minutes and serve.
- fruit salad will keep for a day in the fridge
